Ingredients
- 1 flax egg (1 T. ground flax + 3 T. water)
- 1 c. water
- ½ c. brown sugar
- 1/3 c. oil
- 2 t. vanilla, opt.
- 1 c. oats (quick or old fashioned)
- 1 c. oat flour (I grind my own)
- 1 ½ t. baking powder
- ½ t. salt
- 2 t. cinnamon, opt.
Directions
- Heat oven to 400 degrees.
- Stir together flax egg, water, brown sugar, oil and vanilla. Gently stir in remaining ingredients.
- Poor batter into 12 paper-lined muffin cups. Bake 20-25 minutes. If using 6 large muffin cups, bake at 425 degrees for 20-25 minutes.
