Jody’s Oatmeal Muffins

Ingredients

  • 1 flax egg (1 T. ground flax + 3 T. water)
  • 1 c. water
  • ½ c. brown sugar
  • 1/3 c. oil
  • 2 t. vanilla, opt.
  • 1 c. oats (quick or old fashioned)
  • 1 c. oat flour (I grind my own)
  • 1 ½ t. baking powder
  • ½ t. salt
  • 2 t. cinnamon, opt.

Directions

  1. Heat oven to 400 degrees.
  2. Stir together flax egg, water, brown sugar, oil and vanilla. Gently stir in remaining ingredients.
  3. Poor batter into 12 paper-lined muffin cups. Bake 20-25 minutes. If using 6 large muffin cups, bake at 425 degrees for 20-25 minutes.
